Ingredients
King fish marinate
- 1 – 1½ King Fish scaled and cut in steaks
- 1 Lemon
- Rosemary- a bunch
- ½ teaspoon Cinnamon
- ½ teaspoon Cardamom
- Salt to taste
- ½ teaspoon Spanish paprika
- ½ teaspoon Turmeric
- ½ teaspoon Black pepper
- ½ a cup of Mastered oil or more
- 1 teaspoon minced Garlic
- ½ cup of Olive oil or more
- Cooking cream
- Butter
Lemon butter sauce
- Onions
- ½ teaspoon Black pepper
- 1 teaspoon minced Garlic
- Butter
- Corn flour
- ½ a cup of Milk
- 1 lemon
- Salt to taste
Method
The King Fish marinate
- To a bowl add a sizable amount of mastered oil followed by an equal amount of olive oil
- Add a small amount of Spanish paprika (a half tea-spoon) and turmeric (a half tea-spoon)
- Add a small amount of black pepper
- Add pieces of Rosemary (cut the pieces using your hands)
- Mix the contents in the bowl
- Add a tea-spoon full of garlic and mix
- Add lemon (split the lemon with a knife and squeeze the juice in to the bowl)
- After the contents in the bowl are well mixed, dip the King Fish in to the bowl and make sure it’s covered and absorbs the ingredients in the mixture
- Marinate the fish for 10 to 15 minutes. The marinade to be used is the mixture in the bowl
- To a frying pan, put an adequate amount of butter (The amount should help prevent the fish from sticking on the pan)
- After the butter is all melted, put the fish pieces (one at a time if many) gently avoiding breakage and let it fry for 8 to 10 minutes each for both side.
- Your fish is ready.
The lemon butter sauce
- To the saucepan with the previously used butter, add garlic (you can add more butter).
- Add lemon by squeezing the juice in to the pan
- Add a half teaspoon full of black pepper for seasoning
- Add corn flour and mix
- Add the milk
- Add water and mix then let it to cook for 10 to 15 minutes.
- Your sauce is ready
The Grilled Fish can be served with either rice or mashed potatoes or both. Ugali can serve the best alternative.
